This is India’s answer to ice cream; it is eaten all around the country – on sticks or cut into cubes. It’s a cool treat after a spicy meal.

Malai kulfi is the original: milk is reduced to a thick, saucy consistency and then flavoured with cardamom. Wealthier families would add saffron. Nowadays people make different versions like pistachio (illustrated opposite) and mango.

The kulfis will start to melt very soon after being removed from the freezer, so serve quickly (and ha
