What follows are two versions of key lime pie, although there is little chance of using fresh key limes. You can use bottled key lime juice (or so it’s claimed), but I tend to use ordinary limes.
A note on crusts: it’s traditional to use digestive biscuits, but I wanted to make a chocolate-based one as well, I suppose in memory of the chocolate lime sweets I ate as a child. If you use chocolate digestives, it’s hard to cut the tart once it’s been fridged, so I suggest you use ordina
