If the above is essentially autumnal, this is an early-summer delicacy. Gooseberries are around for such a short time that it’s always good to make use of them when they are in season. Do substitute the elderflower cordial I suggest with some elderflower heads if you have them. Put them in a pan with the fruit and sugar, heat till hot, and leave to steep for 20 minutes or so.
