If you’d ever told me that I’d write a recipe for chocolate cheesecake, I’d have denied it in horror. In theory, the cheesecake purist within me shudders at the idea of something so unorthodox, but for some reason I made one and I found that I shivered only with delight.

Ingredients

  • 125 g digestive biscuits
  • 50 g very, very soft or melted unsalted butter

Method

Preheat the oven to 180°C/gas mark 4 and put the kettle on to boil.

Process the biscuits and butter together and press into the bottom of the tin, then stick the tin in the fridge until the filling is ready.
