The base for these is the same as for the cheesecakes, and the filling is taken from one of the lime pies. I have sometimes dyed these green with just a little food colouring, otherwise you can’t quite tell the difference between these and the mini-cheesecakes. But, for a chic alternative (if you’d rather not use the food colouring) just grate some lime zest over the top once they’re cooked and cooled.
