For me, pomegranates are more essentially Christmassy than cranberries, but it’s not just for seasonality that I include this here: I love the contrast between the crunchy, edible jewels on top and the soft, yielding cream and marshmallowy base beneath.

Ingredients

  • 8 large egg whites
  • pinch of salt
  • 500 g caster sugar

Method

Preheat the oven to 180°C/gas mark 4. Line your baking tray with the baking paper and draw a 20cm circle on the paper.
