  • 2 heads celeriac
  • 4 large potatoes, peeled
  • 3 garlic cloves, peeled

Method

Peel the celeriac and cut it into chunks, dropping these into acidulated water (water with a squeeze of lemon) as you go. Cut the potatoes into chunks about twice the size of the celeriac – they cook much faster. Boil the potatoes and the celeriac, along with the garlic cloves, in plenty of salted water until tender.
