Rock shrimp are native to the southeastern United States and are so-named because they have a rock-hard shell that is generally removed mechanically, causing the shrimp to have a broken appearance. The flavor of rock shrimp is phenomenal however. When cooked, they have all the richness, flavor, and texture of lobster meat, at a much lower price.
