You could use any good blue cheese to make the butter in this recipe, but 1 love Point Reyes Farmstead Original Blue, which is made on a farm in Marin County, not too far from me. I think it’s America’s best blue!

Ingredients

  • Six 10-to-12-ounce thick-cut rib-eye steaks, well trimmed
  • Extra-virgin olive oil for brushing

Method

Brush the steaks well with olive oil and season liberally with salt and pepper. Heat 2 heavy skillets over medium-high heat and sear steaks and cook to the desired doneness, about 4 minutes per side. Top with the Point Reyes Original Blue Butter and Crispy Onion Rings and serve immediately.
