The quality of hams varies widely, as we all know. I always look for one that has no water added and with the bone in. Although not made in California, I’ve always loved the hams and bacon from Nueske’s in Wisconsin, a mail-order company. Although the bone makes it a little harder to carve, it contributes mightily to the flavor and texture of the ham. It also is a good indicator that you’re not getting something that has been formed or otherwise constructed.
