In California, the cherry season is very short, just a few weeks during midsummer. This cobbler and the flan are two ways to take advantage of cherries’ short stay. IQF (individually quick-frozen without sugar) cherries are occasionally available in the market and can be substituted, but of course they are not as good as fresh ones.

Ingredients

  • 5 cups pitted, fresh Bing cherries or Royal Ann cherries
  • ¾ cup sugar

Method

Preheat the oven to 400°F. Lightly butter a 2-quart baking dish. In a medium saucepan, combine the cherries, ½ cup of the sugar, the lemon juice, arrowroot, almond extract, grated lemon zest, and cinnamon. Cook over low heat, stirring occasionally, and bring to a simmer, about 4 to 5 m
