This almond cake is very moist and can certainly be made in advance. It is a great cake to freeze and have on hand for unexpected company. Dressing strawberries with balsamic vinegar and pepper is an old Italian tradition.

Ingredients

  • ½ cup (1 stick) unsalted butter at room temperature, plus additional for the cake pan

Method

Preheat the oven to 350°F. Lightly butter and flour an 8-inch round cake pan. Using an electric mixer fitted with the paddle attachment, or by hand with a wooden spoon, beat the almond paste, butter, and granulated sugar until pale and fluffy. One at a time, beat in the eggs, followed
