This is a simple drink to make, and any sweet, ripe melon can be used. The idea for drinks of this kind comes from the drink called agua fresca, found in Mexico.

Ingredients

  • Zest of 2 lemons, cut into strips
  • 1 cup fresh lemon juice
  • ¾ cup

Method

In a small saucepan, combine the lemon zest, lemon juice, and sugar and bring to a boil. Simmer, stirring occasionally, for 5 minutes or until the sugar dissolves. Strain the syrup and cool it.

In a food processor, purée the honeydew, then force the purée through a fine-mesh strainer, if you want. In a pitcher, combine the purée and cooled syrup and mix well. Chill. Just before serving,
