Every spring, when fresh snow peas first hit my local farmer’s market, I buy a bunch of them so I can prepare Shrimp with Snow Peas—one of the best Chinese stir-fry recipes for snow peas. The vibrant green color and delicate taste of snow peas match perfectly with the shrimp, just the sight of this dish always sparks a healthy appetite. When making this dish, it’s important to not overcook the snow peas. They should be blanched quickly and then stir-fried with the shrimp.
