Chinese are obsessed with seafood and I am no exception. Growing up on an island, with my late mother hailing from a fishing village, my love affair with seafood started when I was little. Every day, my mother would prepare at least one seafood dish for my family—fish or shrimp or both. Sometimes, we would get clams, squid, or even crab. We were really spoiled.

If you’ve been to a seafood market in Asia, for example: Sai Kung in Hong Kong, you will know that the Chinese take their seafood seriously—all sorts of live sea creatures are swimming in the fish tanks and bins of edible marine creatures are on display available as a potential meal for enthusiastic diners.
