Simple Stir-fried Minced Pork

This delicious, easy-to-prepare and inexpensive dish uses minced pork. The preparation takes literally minutes. In this Westernized Chinese creation, iceberg lettuce is used as a vegetable, but you can easily substitute spinach, watercress or Swiss chard. Any leafy vegetable in season will do.

Ingredients

  • tablespoons groundnut oil
  • 450 g (1 lb) lean minced

Method

Heat a wok or large frying pan until it is hot. Swirl in the groundnut oil and, when it is very hot and slightly smoking, add the pork and stir-fry it for 2 minutes. Stir constantly to break up any lumps. Toss in the lettuce, then pour in the soy sauce, rice wine and sesame oil. Sprinkle in the sugar and continue to stir-fry for a further 3 minutes, or until the pork is cooked. Toss in the spri
