While non-Chinese were ordering subgum chow mein, we were eating this more authentic version of chow mein. I say ‘authentic’ because chow mein is not just an ad hoc throwing together of whatever foods are at hand. It is a traditional mainstay of the southern Chinese diet, consisting of boiled and then stir-fried noodles (in Cantonese, ch’ao min), with added bamboo shoots, bean sprouts, slices of pork or whatever other protein and vegetables are fresh and available.
