During winter school holidays, before my mother left for work, she would cook a special rice treat for my lunch at home. Her dish is a simple one to make but very satisfying. She would buy the dried bacon from the local Chinese store, chop it up and cook it with a glutinous-rice mixture. She would then place this in a bain-marie over the radiator to keep it warm, and by noon the flavour of the bacon would have melded with the rice, creating a savoury, mouth-watering treat.
