Avocados are known as ‘pears’ on the English-speaking islands and are usually eaten very simply, sliced and served with salt and pepper (often eaten with every meal during the season) or mashed between two slices of bread. This practice came about because avocado was used as a substitute for butter in the old days before refrigeration. The West Indian varieties tend to be quite large, with a very creamy flesh.
