A totally non-traditional dish but with unmistakable Caribbean instincts. My only insistence is that you use fresh, ripe, juicy, plum tomatoes. Don’t try it with canned ones as you will miss the whole point.

This dish is quick and uncomplicated if you have a jar of Gundy handy. I recommend Walkerswood Solomon Gundy for this dish unless you want to make your own. The amount of Gundy used can be varied as you like but taste it first as it has a strong flavour.
