In Guadeloupe, many of the meat dishes are grilled and often served with a ‘sauce chien’. This simple, traditional sauce is packed with strong flavours - Guadeloupians each have their preferred balance of ingredients so feel free to highlight any ingredients to your liking.

Ingredients

  • 4 marlin or dolphin fillets, or other meaty fish, seasoned with salt, pepper garlic and thyme
  • oil for brushing

Method

  1. First of all make the sauce chien: combine all the ingredients except the oil. This can be done in a blender, though it looks prettier if you very finely hand-cut the vegetables, etc. and then mix in oil a little at a time and allow it to sit for 1 hour.
  2. Wash and dry the fish fillets and season them as described. Set aside to marinate for at least 1 hour (best
