‘Oiled down’, ‘rundown’, these are simply descriptions of cooking with coconut milk and seasonings until the liquid reduces and forms a thick gravy. You’ll get a superior flavour if you use fresh coconut milk, but making it will take a little time (see Cook’s Notes).
