The secret to all grilled or roasted chicken is to season or marinate it well before cooking. This dish can be either cooked in the oven or on a barbecue.

Ingredients

  • 1.5 kg/ lb chicken, spatchcocked (see Cook’s tip)
  • 4 ga

Method

  1. Make the sauce: put the tomato ketchup, honey, molasses, sauce, mustard, lime juice, pepper sauce, salt, pepper and water into a saucepan and bring to the boil, stirring constantly. Cook for a couple of minutes, until all the ingredients are thoroughly combined. Remove from the heat and set aside to cool.
  2. Wash and dry the chicken and then, using a sharp knife,
