Some people add coconut milk to curries and some don’t. It adds richness to the flavour but leave it out if you prefer. Jamaican curry does differ from, say, Trinidadian and the truth is that curries can vary greatly depending on the different blends of spices. It’s nice if you can find one made in the region you are visiting but this too is not critical. Serve with a good fruit chutney and rice.
