For some reason this is one of my top Sunday breakfast choices. Jerk cheese is now being produced in Jamaica and would work here very well.

Ingredients

  • 4 eggs
  • ½ tsp Jerk Seasoning (or Walkerswood dried jerk seasoning)
  • butter, for

Method

  1. Beat the eggs and blend in the jerk seasoning.
  2. Melt a little butter in a small single-omelette frying pan. As soon as it starts to bubble, add the courgette and allow to soften slightly for a few minutes. Season with salt and pepper. Remove from pan and reserve.
