Keshi Yena is a traditional recipe from Curaçao. Literally translated, it means ‘stuffed cheese’. The story goes that this dish was created from leftovers, on a Dutch plantation in Curaçao. A cook developed this use for the rind of the Edam cheese, which regularly ended up in the kitchen after the master’s dinner. Serve with beans and rice and salad. This recipe was prepared for us by chef Michael Eseau in Curaçao.
