A delicious starter, side dish or main vegetarian course. Christophenes (cho-chos) are usually eaten steamed with butter or in soups. They are great in salads, raw, but that is not a traditional use. They are popular stuffed with meat, but we won’t discuss that in this chapter.

Ingredients

  • 2 christophenes
  • 1 tbsp butter
  • 1 spring onion, chopped

Method

  1. Cut the christophenes in two lengthways, place in a pot of boiling, salted water and cook until tender. Remove from the heat, drain and leave to cool.
  2. Sauté the chopped spring onion in butter until softened. Then add the breadcrumbs and fry until brown.
