These sweet and savoury flans make the perfect accompaniment to our delicious Oxtail in Riojà. In fact they will go well with any rich stew, meat or game.

Ingredients

  • 4 sweet, ripe plantains
  • 5-cm/2-inch piece of fresh root ginger

Method

  1. Preheat the oven to 180°C/350°F/Gas Mark 4.
