This dressing is based on a standard vinaigrette recipe but using lime instead of vinegar. The sharpness of the lime cuts through the oily base and complements any salad containing fruit.

Ingredients

  • 2 tbsp lime juice
  • 2 tsp sugar
  • 1 tsp

Method

  1. Blend the lime juice, sugar, mustard, garlic, chives and lime zest together, using a whisk.
  2. Then add the oil slowly, whisking continuously. Toss with the salad just before serving.
