Love Apple (Tomato) Sauce

Tomatoes (also known as ‘love apples’) grow to a glorious level of sweet ripeness in the Caribbean sunshine. This sauce incorporates Middle-Eastern style in the use of honey to sweeten slightly. I suggest you serve this with Cornmeal Pumpkin Fritters or Cornmeal Coo-Coo, though you will probably find many other uses. It’s quick and fabulous!
