The use of tamarind in this classic sauce adds a completely different dimension to it. Make plenty - you won’t be able to stop eating it! It is a fabulous accompaniment to many fish or chicken dishes.

Ingredients

  • 150 ml/¼ pint mayonnaise
  • 1 tsp chopped fresh chives or tarrag

Method

  1. Mix all the ingredients together and then set aside to stand for at least one hour before serving, to allow the flavours to mingle.
