If you love desserts, you’ll certainly adore this one. The combination of the subtle flavour of the Blue Mountain coffee and the satiny texture of the creamy flan work brilliantly together.

Ingredients

  • 225 g/8 oz caster sugar
  • 6 eggs

Method

  1. Preheat the oven to 180°C/350°F/Gas Mark 4.
  2. Make the caramel syrup: heat half of the sugar in a heavy-bottomed pan over low heat for about 5–10 minutes, until the sugar has melted and has turned golden brown. Keep tipping the pan, taking care not to le
