This delicious tart is deceptively easy to make. However, you will need a frying pan with a steel handle rather than plastic, so it can be put in the oven. I have used frozen puff pastry here, which makes an excellent substitute for home-made puff pastry and speeds up the preparation process considerably.

Ingredients

  • 4 mangoes, peeled and sliced
  • 60 g/2 oz unsalted butter

Method

  1. Place the mango slices in a colander to drain for 30 minutes.
  2. Preheat the oven to 200°C/400°F/Gas Mark 6.
