Roasted Mussels in Spicy Coconut Broth

Ingredients

  • 2 tablespoons coconut oil
  • 2 shallots, chopped
  • 3 teaspoons fresh

Method

  1. Heat the coconut oil in a large pot over medium-high heat.
  2. Add the shallots, and sauté until translucent.
  3. Add the ginger, garlic and peppers, and stir until fragrant.
  4. Stir in the coconut milk, fish sauce, sugar and lime juice.
  5. Stir using a wooden spoon to scrape up any browned bits that have stuck to the bottom of the pot.
