  • 1 recipe Machuquillo
  • ¾ cup pork cracklings, chopped
  • 2 to 3 tablespoons

Method

Mold the machuquillo into 8 to 12 patties. Dip the patties in the pork cracklings, pressing the cracklings into both sides. In a large skillet over medium-high heat, heat the oil. When hot, add the patties and cook until golden brown on both sides, 2 to 3 minutes per side. Sprinkle with the parsley and serve as a side dish with meat or poultry.
