Stuffed peppers is a favorite home-style Cuban dish. Since rice is a staple in Cuba, cooked rice is a popular base for stuffings. The rest of the recipe, however, usually depends upon the creativity of the cook and what is in the pantry or fridge. The peppers may be served with a salad as a light main course, or as a side dish with roasted meat or poultry.
