Unlike other Spanish-speaking countries in Latin America, a cake in Cuba is a cake (pronounced “ka-kay”) not a pastel or torta. In the 1950s, among the gifts every young bride received was a copy of Cocina al Minuto (the Cuban equivalent of The Joy of Cooking) written by Nitza Villapol and Martha Martinez. During that era, cooking trends from the United States, including cake making, were fashionable in Cuba, and the table of contents of Cocina al Minut
