Pan de gloria, light, fluffy sweet rolls dusted with sugar, are standard fare at coffee kiosks in Cuba. Though they are not difficult to make, most of the Cubans we met bought them at the coffee window or at the bakery.

Ingredients

  • 4 to 5 cups all-purpose flour
  • 2 (1⁄4-ounce) packages fast-rising (instant) yeast

Method

In a large mixing bowl, stir together 1 cup of the flour, the yeast, sugar, and salt. In a saucepan, combine the evaporated milk with enough water to make 2 cups total liquid. Stir in the oil and heat the liqu
