Among El Floridita’s most famous patrons was Ernest Hemingway, who considered it one of his favorite hangouts. Even after all these years, it is impossible to enter El Floridita without remembering Papa Hemingway. His favorite stool at one end of the bar is chained off so no one else can sit there, and a life-size bust of the author presides over the room. This variation on the classic daiquiri, made without sugar, was supposedly invented by Hemingway because he was diabetic.
