I prefer to use frozen peas because they have a consistently sweet flavour and are much more convenient. Quite often, after all the labour of shelling them, fresh peas turn out to be tough and flavourless when they are cooked.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, peeled and finely chopped
  • 1 small leek, trimm

Method

Heat the vegetable oil in a large pan, add the onion, leek and bacon, if using, and cook gently until the vegetables are soft. Add the peas, mint and stock, bring to the boil and simmer for 10 minutes. Purée in a blender and then strain in a fine sieve. Season with salt and pepper to taste.
