Iced Strawberry Soup with Fromage Frais

A simple summer soup that everyone will enjoy. Eat it with a spoon or drink it through a straw. It can also be served as a dessert, but children might enjoy the fact that they are getting their pudding first for a change.

Ingredients

  • 400 g ripe strawberries, hulled
  • Leaves from 1 sprig of mint

Method

Purée the strawberries in a blender with the mint leaves and sugar until smooth. Transfer to a shallow bowl and place in the freezer for about an hour, until semi-frozen, stirring occasionally. Serve in a soup bowl or cups, topping each portion with a spoonful of the fromage frais.
