A simple Irish country dish that’s perfect for young children and can be enjoyed on its own or as an accompaniment to most meat dishes. You could also serve it topped with a poached egg or add some chopped ham to make it more substantial.
Cook the cabbage in boiling salted water until tender, adding the spring onions about a minute before the cabbage is cooked. Drain well and mix with the mashed potato. Season to taste, then transfer to 4 individual dishes, make a little hollow in the centre of each portion and fill with melted butter. The idea is to take a forkful of the potato mixture and dip it in the butter.
