A good Greek salad is as colourful and healthy as you can get. I used to hate the idea of it, probably because I had never had an authentic one. I also hated olives and couldn’t bear the thought of olive oil. Now I use it by the gallon.

Chop the vegetables as finely as you wish, depending on the size of the mouths you are feeding. Greek feta can sometimes be a bit salty, so you may want to leave it out or replace it with a milder crumbly cheese such as Lancashire.
