I’m amazed that most people’s perception of a Spanish omelette is lots of chopped-up ingredients mixed with beaten egg. I’m not sure where this idea came from but it’s far from the simple dish found in Spain. Potatoes, onion and sometimes a herb are all it contains and all it should.
Boil the potatoes for about 5 or 6 minutes, until just tender, then drain and set aside. Melt half the butter in a pan and slowly cook the onion until soft and translucent. Melt the remaining butter in a heavy-based 20cm non-stick frying pan. Mix the onion with the potatoes, chives, eggs and some seasoning and pour into the pan.
