This is a perfect family meal and a good way to get children to enjoy fish in its natural form. Cod was once considered to be a second-rate fish but depleted stocks of prime fish such as brill, turbot and sea bass meant that chefs began to think up more inventive ways to cook with cod. It now sits happily beside the best of fish on menus all over town.
