All children love jelly and, although this one looks sophisticated, it is very simple to make. You can vary the fruit depending on the time of year but the jelly won’t set if you use acidic fruit like pineapple because the acid breaks down the gelatine. Depending on the moulds you use, you can make individual jellies or one great big one. Serve it to adults as a dinner-party dessert with some fruit purée and crème fraîche on the side.
