I first saw these in a smart private Italian dining club, where the food is always inspiring and high quality. It serves them in matchstick-sized pieces which are difficult to replicate and keep crisp. So this is an equally delicious alternative for all. Especially the cook.

Ingredients

  • 4 medium courgettes
  • 1 free-range egg
  • 2 tablespoons milk

Method

Cut the courgettes into three, crossways, then cut each third into eight. Beat the egg with the milk. Have ready 4 dishes. Put the flour in the first, the beaten egg and milk in the second and the grated Parmesan in the third. The fourth is for the prepared courgettes. Coat the courgette pieces with the flour, then the egg and lastly the Parmesan. Make sure you shake off any excess flour before
