I played around with this recipe for a while before I got it right. I really wanted a breakfast and brunch taco that would show off eggs in a tasty way, but also be really beautiful and colorful. These tacos do all of that and, lucky for you, they are quick and easy to put together.

  • 12 slices thick-cut applewood-smoked bacon
  • 1 cup mayonnaise
