In my early days of cooking, I learned how to make an omelet. At that time, I never thought of making an egg white omelet. As I’ve gotten older, I eat healthier – natural progression. This is a really simple, handsome, and healthy omelet, and it’s an easy weekday breakfast or lunch.

Ingredients

  • 2 avocados, peeled and pitted
  • 8 egg whites, divided
  • Kosher salt and freshly ground black pepper

Method

Slice each avocado in half and thinly slice all of the halves.

In a small bowl, whisk 2 egg whites, seasoned with salt and pepper, until frothy.

In a medium nonstick pan over medium heat, warm 2 teaspoons of the butter. Once hot, add the egg whites, tilting the pan to evenly distribut
