This is a great weekend hangover breakfast, if you stayed out a little too late and had one too many. It’s also really easy to make vegetarian with sauteed spinach. Over the years, including my bigger production years at the wynn and the bellagio in Las Vegas, I’ve made thousands of plates of eggs benedict. At the Bellagio, we cooked 1,000 breakfasts every morning. I’m guessing if you multiplied 60 benedicts a day — made personally by me — by 365 days a year, by 16 years that would be rough
