I feel the same way about a chicken burger patty as I do about any burger patty, or meatball for that matter – less is more. I don’t like too much filler in them in terms of egg, bread crumbs and anything else. Season the patty just a bit and that’s that. Let the meat shine. Feel free, however, to add other things as toppers and sauces to this burger, like a cilantro mayo or a tomato confit. Whatever sounds good.
